Bowl of Calm | Snow Fungus & Lotus Seed Dessert☁️
This simple Traditional Chinese herbal soup is made with five classic ingredients: Tremella, Lotus Seed, Goji Berry, Red Dates (Optional), and Chinese rock sugar (Optional).
Naturally sweet, lightly silky, and a comforting bowl any time of day.
A small, familiar ritual rooted in ChineseEast Asian culinary tradition or food therapy.
How to make it:
Soak the tremella
Rinse the dried Bai Mu Er, then soak in cool water for 30–60 minutes, or until fully expanded and soft.
Trim and tear
Remove the firm yellow base at the bottom of the tremella. Tear the soft white parts into small pieces. Smaller pieces help create a silkier texture.
Simmer
Add the tremella, lotus seeds, and water to a pot. Red dates can also be added at this stage. Bring to a boil, then reduce to a gentle simmer.
Cook until soft and silky
Simmer for about 45–90 minutes, until the lotus seeds are tender and the soup becomes slightly thick and gelatinous.
Sweeten
Add rock sugar during the last 10–15 minutes of cooking. Stir until dissolved.
Add goji berries last
If using goji berries, add them in the last 5 minutes so they stay soft and vibrant without becoming overcooked, while also better preserving their natural color, flavor, and naturally occurring nutrients.
